The Big Easy Story

Big Easy Foods of Louisiana began more than a decade ago, selling sausage and boudin in stores throughout Southwest Louisiana. Known then as French Market Foods, the company’s products quickly grew in popularity, so managing partners Larry Avery and Mark Abraham decided to build a new 15,000 square foot USDA plant on Ryan Street in Lake Charles. They also began expanding their product line to include the famous Turducken and the first completely boneless stuffed and seasoned chicken.

After enjoying such success in Louisiana, the company decided to expand to Texas, Mississippi, and Tennessee. Big Easy’s product line grew even more when Larry and Mark acquired one of the premier domestic shrimp processors in the Gulf Coast region and began putting their “Big Easy” branded shrimp into grocery stores across the country. Today, Big Easy Foods still sells sausage and boudin, but we also offer over 30 other products including the finest Wild Caught Shrimp, Boneless Chickens, turduckens, and Louisiana Entrees.
