Our Story

Big Easy Foods of Louisiana started more than a decade ago with a simple mission: to bring the rich, flavorful traditions of Southwest Louisiana to kitchens everywhere. Back then, we were known as French Market Foods, and our journey kicked off with just two beloved staples: sausage and boudin. Thanks to the enthusiastic support of our local community, our products quickly gained popularity.

Seeing the growing demand, managing partners Larry Avery and Mark Abraham took a bold step. They built a state-of-the-art 15,000 square foot USDA facility on Ryan Street in Lake Charles, giving us the space to expand our offerings. It was here that we introduced our now-famous completely boneless stuffed and seasoned chicken.

Our product line saw further growth when we acquired one of the premier domestic shrimp processors in the Gulf Coast region. This acquisition led to the introduction of our “Big Easy” branded shrimp and the Gulf Island Shrimp and Seafood line of products, which quickly became a favorite from coast to coast.

Today, Big Easy Foods serves up an impressive array of over 30 products. While we stay true to our roots with our signature sausage and boudin, we also proudly offer Wild Caught Gulf Shrimp, Boneless Chickens, Jalapeno Poppers, and a variety of Louisiana Entrees.
